Method

  1. Heat oven to 180°C (top/bottom heat). Lightly grease a medium baking dish (about 20 cm) with canola oil.
  2. Dice the apples. Toss with 1 tsp of the cinnamon (and lemon zest if using).
  3. In a large bowl, mix Topfen, yogurt, egg yolks, sugar, vanilla sugar, semolina, and the remaining cinnamon until smooth.
  4. Let the batter stand for 5 minutes so the semolina can swell slightly.
  5. Whip egg whites with a pinch of salt to stiff peaks.
  6. Fold the whipped egg whites gently into the Topfen mixture in 2 additions.
  7. Fold in most of the diced apples (reserve a small handful for the top).
  8. Spoon into the baking dish, scatter the reserved apples over the top, and bake for 30–35 minutes until set and lightly golden.
  9. Cool for 10 minutes to firm up, then portion. Serve warm (or chilled) with extra fruit or a spoon of yogurt if you like.
