Lighter Apple Quark Crumble (Apfel-Topfen-Crumble)

Method

  1. Heat oven to 190°C (top/bottom heat). Lightly oil a small baking dish (about 20 cm) or 4 ovenproof ramekins with a little canola oil.
  2. Toss sliced apples with lemon juice, cinnamon and (if using) honey. Spread evenly in the baking dish.
  3. In a bowl, mix oats, ground almonds, flour, sugar and a pinch of salt.
  4. Add canola oil and rub in with fingertips (or stir well) until you get a crumbly, clumpy topping.
  5. Sprinkle the crumble topping evenly over the apples.
  6. Bake for 25–30 minutes, until the apples are tender and the topping is golden and crisp.
  7. While it bakes, stir quark with vanilla. Add 1–2 tbsp milk if you want it creamier and easier to spoon.
  8. Serve warm crumble with a generous spoon of vanilla quark on top or on the side.
