Method

  1. In a medium saucepan, combine diced apples, frozen berries, water, cinnamon, half the lemon zest, lemon juice and a pinch of salt.
  2. Cover and simmer over medium heat for 6–8 minutes, stirring once or twice, until apples are tender and berries are saucy.
  3. Stir in the honey, taste and adjust sweetness if needed, then keep warm on very low heat.
  4. In a bowl, mix quark, skyr (or yogurt), vanilla and the remaining lemon zest until smooth.
  5. For the topping, heat a small non-stick pan with canola oil. Add oats, hazelnuts and a pinch of salt.
  6. Toast for 3–4 minutes, stirring constantly, until golden and fragrant. Tip onto a plate to cool slightly (it crisps as it cools).
  7. To assemble, spoon the quark mixture into 4 glasses or bowls.
  8. Top with warm apple-berry compote, then finish with the toasted oat-hazelnut sprinkle. Serve immediately.
