Chicken Strips with Quick Peanut-Lime Sauce and Cucumber

Fast-seared chicken strips with a creamy peanut-lime sauce and crisp cucumber on the side.

Why smarter

Chicken strips cook quickly in a hot pan (about 7–9 minutes). Sauce is no-cook and comes together by whisking with water in 1–2 minutes. Cucumber slicing and quick seasoning fit easily into the prep time; total 19 minutes includes pan preheat and plating.

Chef tip

If the sauce seizes, add water 1 tsp at a time and whisk until silky; keep it loose so it coats the chicken easily. Shortcut: Use pre-cut chicken strips; use smooth store-bought peanut butter.

Method

  1. Pat chicken strips dry and season with salt and pepper.
  2. Whisk peanut butter with the juice of 1/2 lime and 2–3 tbsp water until smooth and pourable; season with salt.
  3. Slice cucumber into thin half-moons; squeeze over a little lime juice, add salt and pepper, and toss.
  4. Heat a frying pan with a little oil on high. Sear chicken strips 7–9 min, turning, until browned and cooked through.
  5. Plate chicken with cucumber and drizzle with peanut-lime sauce. Add extra lime wedges to taste.
