Creamy Mustard Chicken Strips with Mushrooms

One-pan chicken strips and mushrooms in a quick Dijon–crème fraîche sauce.

Why smarter

Prep is minimal with pre-sliced mushrooms and strips. Mushrooms brown in ~7 minutes, chicken cooks in ~7 minutes, and the crème fraîche–Dijon sauce finishes in ~2 minutes plus preheating and plating for a realistic 20 minutes total.

Chef tip

If the sauce looks too thick, loosen with a splash of water from the kettle; if it looks thin, keep it on low heat for 1 minute longer. Shortcut: Use pre-sliced mushrooms and pre-cut chicken strips to stay within 20 minutes.

Method

  1. Heat a large pan over medium-high heat with a little oil. Add mushrooms and sauté until browned and their moisture cooks off, 6–7 minutes; season with salt and pepper.
  2. Add chicken strips to the pan. Sear, stirring occasionally, until just cooked through, 6–8 minutes.
  3. Lower heat to medium-low. Stir in crème fraîche and Dijon mustard. Simmer gently 1–2 minutes until glossy and coating; adjust salt and pepper and serve.
