Ham-Wrapped Green Asparagus with Lemon Butter Pan Sauce

Pan-seared green asparagus wrapped in warm ham, finished with a fast lemon-butter sauce made in the same pan.

Why smarter

15 minutes is realistic: 3–4 minutes to rinse/snap ends, 7–8 minutes to pan-cook asparagus, 2 minutes to warm/crisp the ham-wrapped bundles, and about 1 minute to swirl lemon and butter into a quick pan sauce and plate.

Chef tip

Pat the asparagus dry so it sears instead of steaming; if the pan looks dry, add a splash of water, cover briefly, then uncover to finish with color. Shortcut: Use store-bought sliced cooked ham.

Method

  1. Rinse asparagus and snap off woody ends. Pat dry.
  2. Heat a large pan over medium-high heat with a small knob of the butter. Add asparagus, season with salt and pepper, and pan-sear 6–8 minutes, turning, until crisp-tender. Add a splash of water and cover 1 minute if needed.
  3. Remove asparagus to a plate. Wrap 2–3 spears per ham slice. Return bundles to the pan 1–2 minutes, turning, until the ham is warm and lightly crisp at the edges.
  4. Lower heat. Add remaining butter and squeeze in lemon juice (about half the lemon). Swirl to emulsify, then toss bundles briefly in the sauce. Plate and finish with a little extra lemon juice if desired.
