Watermelon and Feta Skewers with Mint

Method

  1. If using wooden skewers, soak them in water for 10 minutes to prevent splintering (optional for short serving skewers).
  2. Cut the watermelon into 16 bite-size cubes. Cut the feta into 16 small cubes and pat dry with paper towel.
  3. Thread 2 watermelon cubes and 2 feta cubes onto each skewer, alternating as you go.
  4. Arrange the skewers on a platter or tray lined with paper towel to catch any extra juice.
  5. In a small bowl, mix the torn mint, lemon zest, lemon juice and honey (if using).
  6. Spoon or drizzle the mint-lemon dressing lightly over the skewers.
  7. Finish with a little black pepper and a few extra mint leaves.
  8. Serve immediately, or chill for 15–30 minutes for a colder, firmer bite.
