Method

  1. Preheat the oven to 180°C. Lightly grease a mini muffin tray (or line with mini paper cups).
  2. In a bowl, mix the wheat bran, oats, wholewheat flour, baking powder, cinnamon and salt.
  3. Stir the raisins through the dry ingredients (this helps stop them sinking).
  4. In a second bowl, whisk the egg, yoghurt, milk, canola oil, brown sugar and vanilla until smooth.
  5. Stir in the grated apple.
  6. Add the wet ingredients to the dry ingredients and fold gently until just combined (don’t overmix).
  7. Let the batter stand for 5 minutes, then spoon into the mini muffin tray (about 3/4 full).
  8. Bake for 12–15 minutes, or until risen and a skewer comes out clean.
  9. Cool in the tray for 5 minutes, then transfer to a rack to cool. Serve warm or at room temperature.
