Grilled Peaches with Vanilla Yoghurt and Crushed Almonds

Method

  1. Preheat a braai grid, grill pan, or nonstick pan to medium-high heat.
  2. Lightly brush the cut sides of the peaches with canola oil (or brush the grill lightly).
  3. Place peaches cut-side down and grill for 3–5 minutes until char marks form and the fruit starts to soften.
  4. Flip and grill for 1–2 minutes more, just to warm through. Remove to a plate. Sprinkle with cinnamon if using.
  5. In a bowl, stir together the yoghurt, vanilla, and a small pinch of salt.
  6. Taste the yoghurt; if you want it sweeter, stir in 1–2 teaspoons honey or maple syrup.
  7. Divide the vanilla yoghurt between 4 bowls or plates and top with the warm grilled peach halves.
  8. Finish with crushed almonds (and an extra tiny drizzle of honey if desired). Serve immediately.
